Chef/Owner Brandon Wilson, P.C.E.C., is a certified executive chef through the American Culinary Federation and is the 2nd Vice President of the ACF Smoky Mountain Chapter. He is also a culinary instructor at the University of Tennessee and a published cookbook author.
Chef Brandon has 25 years of experience in the service industry, beginning at age 15 as a dishwasher at a pancake house in Atlanta. He went on to cook in various high-end kitchens across the country, including L'Auberge in Sedona, Leopard Lounge in Atlanta, Windows on the Park in Knoxville, and the UT Conference Center.
With this "hard knocks" education under his belt, he enrolled in University of Tennessee's culinary program to learn the business side of running a commercial kitchen. Upon graduating in 2013, he opened Gonzo Gourmet Catering Company and Food Truck. At the time, Gonzo Gourmet was one of just a handful of licensed food trucks in Knoxville. Though the LLC's focus is on catering, the food truck can still be seen vending at various locations in the Knoxville area. And Chef Brandon uses the mobile unit as an on-site kitchen to assure fresh foods at nearly all catered events.
